The interviewees consist of customers, low-level employees, managers, chefs,restaurant owners, culinary educators, and family members of the stakeholders. Shareholders want a continuous satisfying return on investment, and they are willing to haveemployees work long hours. “There were days where it would be a whole 12 hours, it’s called‘clope’, where you close and you open so you’re there working from 6:30 pm to 2:30 am, andhave to be back there at 10 am to work

Employees in the food industry want to maintain stable employment, some hold more thanone job because what they earn is not enough to live. The long work hours bring a lot of stressand pressure to their lives. This includes management as well. “Alcohol and drug use aredefinitely at play when it comes to finding a way to de-stress within the industry…it’s easy topartake after work or even during your shift when you are surrounded by it.” – San Gabriel
Customers are usually not aware of the substance abuse experienced by food service workers.That does not mean however they are inherently apathetic to the subject. “if my waiter or cookwas drunk or on drugs. Bartenders maybe are the only ones that have a free pass but I think it’sstill illegal. Overall I look down upon it.” – McAlpine
The General Public is affected by the use of drugs and alcohol in the food service industry..The general public is interested in having healthy and safe family members that work in thefood service industry. “Our family has been suffering immensely due to my brother’snegligence; he preferred to indulge in alcohol and substance rather than fulfilling hisresponsibilities” – Ryan
